RECIPE // Grilled Tilapia fillets

Tilapia is a really meaty fish with a delicate flavour all of it’s own yet it holds strong flavours really well so great for marinated and quick cooks on the grill or pan frying


X 2 Tilapia fillets skin on
2 inch grated ginger
1 glove garlic minced
x 2 guinnea peppers ground
Juice of one lime
1 tsp chilli flakes
2 Kpakpo Shito peppers de-seeded and finely diced
x 1 small onion finely diced
Salt and freshly ground pepper to taste
Oil to fry and baste


Mix all your marinade ingredients into a bowl
Place your fillets flesh down on a baking tray covered in grease proof paper or foil
With a serrated knife gently score the skin in three equally spaced diagonal lines
Work the marinade into the skin and slits you’ve made – turn and cover the flesh side of the fish in the marinade also but leave the fish skin side up to grill
Cover with foil and leave in fridge to marinate for at least an hour

Heat your grill to 180O and grill the fish skin side up for 10-15 minutes until skin is crisp and flesh cooked through

Serve hot with a side of kpakpo shito salsa
